Pearled Barley Soup (serves 4 people) Thinly slice a large onion and cut 50 grams of speck into cubes, brown it in a large pan together with some chopped onions and celery. Cover with a litre of water or broth and bring to the boil. Add salt to taste and pour 200/250 grams of pearled Barley allowing it to cook for 25/30 minutes.
