SFARRATA – Mix of Cereals and Legumes

It is not easy to cook cereals and legumes together given their different cooking times. The Sfarrata is a mixture of Broken Emmer Wheat, Pearled Emmer Wheat, Pearled Barley, Lentils and Chippeas. The lattet are added having been broken to make them ready for cooking in about 30 minutes according to the instructions for the Farro Soup. The Sfarrata is a soup that is rich in protein and fibre and excellent taste.
