Ma’Kaira White Box – Durum Wheat Semolina and Barley Pasta

Ma’kaira is a durum wheat semolina pasta with the addition of hulled barley flour which improves its nutritional qualities making it a nutraceutical food. The presence of betaglucans, typical of this cereal, contributes to the control of cholesterol metabolism, has a positive effect on postprandial glycaemia and on the insulinemic response. The effect of increasing the feeling of satiety should not be underestimated. Another important class of compounds present in the hulled barley grain is constituted by fats which include tocopherols and tocotrienols, whose molecule is structurally linked to vitamin E. These are antioxidant molecules able to compete with free radicals (tocopherols) and more markedly hypocholesterolemics (tocotrienols) usable in pathologies such as arteriosclerosis.

 

For a first taste it is recommended to use a very simple condiment, for example only extra virgin olive oil, pecorino cheese and pepper or a Genovese pesto.
The cooking time for the shape chitarra is about 10 minutes, 6 minutes for the linguine and 8 minutes for the Bucatini.
It is advisable to cook the pasta in plenty of water, drain it before it is cooked al dente and season it using a large bowl.
